The chef who went to Tokyo and came back with a silver medal
Jérémi Seguda grew up in Vallorcine, a small village at the far end of the Chamonix valley. He got into Japanese cuisine as a teenager, took it seriously enough to enter competitive sushi-making, and won three French vice-championships (2018, 2019, 2021) before going to the World Sushi Cup in Tokyo in 2024 and placing second in the world. He now sits on the jury at the French and European sushi championships.
Then he came back to Chamonix and opened a restaurant. That is Yumidori.
What is on the menu
The menu is Japanese-inspired rather than strictly traditional. Jérémi works with the techniques he competed with but builds a menu that works for the pace of a mountain resort: bowls that fill you up after a day on skis, rolls precise enough to eat slowly, curries that warm you when the valley is at minus 15.
Hot and cold bowls, maki, udon noodles, Japanese curry, a chirashi, desserts including tiramisu and tapioca pearls. The mochi and seaweed salads are sourced rather than house-made; everything else comes out of his kitchen. Vegan and gluten-free options run throughout the menu, not as an afterthought.
The setting
52 avenue Ravanel le Rouge is a few minutes' walk south of the town centre. There are 25 seats inside and 40 on the terrace, which looks toward Mont Blanc through bamboo. At lunch the format is self-service; in the evening the menu is made to order.
